The easiest way to import a new country is to uncheck the box "Use Region of Interest" when you create your scenario and import your country boundary as an anonymous polygon. Unchecking that box will skip the step where you select a political boundary (e.g. country/state/county in the US case). Once you create your scenario without the Region of Interest (ROI), you can go to File → Import → Data → Dataset. Where it asks for "Select file type" select Shapefile, select your shapefile and then for type, Anonymous Polygon. You can then load the country boundary into your scenario.

The Region of Interest (ROI) is only a view filter so it is not required by Ergo. Selecting an ROI allows Ergo to filter data that is outside of the boundary so it doesn't show up in the view. However, if you want to select your country (similar to US - > Tennessee → Shelby County) and use it as an ROI, this will require more effort and programming knowledge.
